Oreo Cheesecake

When I discovered how sensitive I am to dairy, I was determined to discover a way to still bake cheesecake that is dairy free. It has become a lot easier over time with how many dairy alternatives there are these days! When you potentially discover a food does not resonate with your body anymore, that does not mean you can no longer have the foods you love. This is an opportunity to get creative and make recipes you have loved in new ways. This dairy free cheesecake will satisfy all your cheesecake desires!

Ingredients:

Oreo Crumble:

1/2 cup almond flour

1/4 cup cacao powder

1/4 cup Swerve Confectioner Sweetener or Lakanto Powdered Monk Fruit

1 tbsp. ghee, melted

1 egg

1 tbsp. Non-alcoholic vanilla

Dash of salt

Crust:

1 cup almond flour

1/4 cup cacao powder

3/4 cup Swerve Confectioner Sweetener or Lakanto Powdered Monk Fruit

2 tbsp. ghee, melted

1 egg

Filling:

16 oz. Kite almond cream cheese

3/4 cup Swerve Confectioner Sweetener or Lakanto Powdered Monk Fruit

3 tbsp. coconut cream

1 tbsp. Non-alcoholic vanilla

2 eggs

Whipped Cream:

1/2 cup coconut cream

3/4 cup Swerve Confectioner Sweetener or Lakanto Powdered Monk Fruit


Instructions:

  1. Preheat oven to 300 degrees.

  2. In a bowl, mix together the Oreo Crumble ingredients.

  3. Grease the bottom of a baking pan or lay down a piece of parchment paper.

  4. Roll out the crumble dough so it is very thin.

  5. Bake for about 20 minutes or until firm.

  6. Let cool.

  7. Grease the bottom and sides of a 7-inch springform pan.

  8. In a bowl, mix together the crust ingredients.

  9. Press evenly into the bottom of the pan.

  10. Cook crust for 10 minutes.

  11. In a bowl, beat all the filling ingredients together.

  12. Break apart the Oreo crumble into small pieces. Mix into the filling ingredients.

  13. Pour the filling into the springform pan.

  14. Bake for 40 minutes or until a toothpick comes out clean and the top is golden brown.

  15. Remove from oven and let cool.

  16. In a bowl, mix together the whipped cream ingredients and place in the fridge until cheesecake is done.

  17. Add a dollop of whipped cream onto your piece of cheesecake and enjoy!
